Ever crave a really good salad that isn't just about being healthy? I’m talking about a real salad—one that fills you up, makes you feel good, and maybe even makes your skin glow a little.
My Kale and Quinoa salad is all about balance. The kale brings the crunch and the green goodness (hello, fiber and vitamins!), while the quinoa adds a nutty bite and some plant-based protein to keep you full. Toss in some colorful extras—think cherry tomatoes, cucumbers, maybe even a handful of toasted almonds—and you’ve got yourself a bowl of edible sunshine.
And for the dressing, we’re going zesty lemon, a touch of maple syrup for sweetness, olive oil, and a spoonful of Dijon mustard. Simple but so flavorful.
Both the salad and dressing can be easily prepped in advance and assembled when ready to eat... It's that easy.
