TOFU SALAD
This Tofu Salad is easy to make ahead, high in protein and perfect for lunch and dinner.
I found that pairing this with a simple red cabbage and carrot mix and my Tahini Salad Dressing was a beautiful, fresh, and crispy combo. I added cucumbers and sprinkled it with pumpkin seeds to add crunch and an extra boost of nutrients.
