I had the extreme pleasure of tasting Chef Jaz’s interpretation of Butter Chicken. Her spin was to create a dairy free version by utilizing cashew cream! The flavor and mouth feel was AMAZING!!! By using the cashew cream she was able to create a full bodied sauce with a buttery mouth feel. I was completely blown away wanting more!! I cannot wait for more of her dairy free creations!!

The Best Butter Chicken I have ever tasted!

 

I had the pleasure of judging a cooking competition and was impressed by one of the submissions. 

 

Butter Chicken, A traditional Indian dish with a twist ! Dairy and Gluten Free

 

The Currie was made with cashews, providing the creamiest texture with all the right balance of traditional spices . The chicken was plump and tender that carried the savory moist texture you would expect from a butter chicken curry dish. No heavy breading (Gluten Free!) Cashew Cream (Dairy Free!) was not gritty as some nuts can be when processed into a sauce, this dish hit on all levels. I loved the richness of all the spices combined . I would order this version of the classic any day of the week. Thank you for allowing me to experience your heritage dish with a twist.

About me

Hey I'm Jaz. I'm a wife, mother, IT Professional and among the many things I enjoy pursuing, cooking for my family tops the list. There's a sense of that 'ahhhh' that comes with knowing you have fed your loved one's belly.

 

As a busy professional, I need simple, easy and 'good for you' recipes to put on the dinner table on a weeknight, and indulge in something more decadent over a relaxing weekend. My recipes are reflective of just that.

 

My love of cooking began at a very young age, watching my mum cook amazing meals. I became her sous chef for weekend entertaining that my parents loved to do, almost on a monthly basis. 

 

Recently, I was compelled to come up with a new way of cooking; the Gluten-free and Dairy-free way. My husband was diagnosed as being intolerant to both dairy and gluten and that meant no more eating the way we used to. After our initial thoughts of "how can this be?" I became very frustrated and overwhelmed because I didn’t know anything about the GF/DF way of life, and even more frustrating and sad was my husband’s many aches and pains and the weight loss that resulted from limiting what he could eat as a result of the diagnosis.  

 

BUT…. I re-learned to cook by trial and error and devoured knowledge wherever I could. I re-created some of our favorite classic dishes and experimented to make them both gluten and dairy-free without losing any flavour. I continue to re-create classic dishes along with developing new recipes with my own twist. Does this make me an expert? I believe so. It works for my family and has worked for others that cook my recipes. Let me leave you with this … If I can learn to cook all over again and feed my family, so can YOU!

My recipes on the blog are entirely gluten-free, almost entirely dairy-free, refined sugar free and whole foods based.  If you're not gluten or dairy sensitive, feel free to substitute gluten pastas, grains and dairy to the recipes. Since I personally am not intolerant or sensitive to either gluten or dairy, I do on rare occasions substitute these just for myself :-)
