Spinach Pesto

Did you know a pesto doesn't have to be made with basil? Pesto can be a combination of anything you want it to be. Though my recipe here contains basil, it is primarily made with spinach, adding that extra veggie component but certainly not compromising flavor!


Though the basic components of pesto are the same, you can mix it up with any delicate herbs and nuts, not just basil and pine nuts. I have mixed it up with walnuts, almonds, pecans, spinach, kale, and even arugula, and they all taste amazing. So, use whatever you have on hand!


This dairy-free spinach pesto is ready in minutes with a high-speed blender.


It pairs perfectly well with my gluten-free pizza crust topped with shrimp, chicken, or a spread of other vegetables.
