Red Lentil Wrap



If you're looking for a nutritious and tasty wrap for a snack on the go, or to roll your favorite ingredients in, look no further. Eating gluten-free can be challenging, not to mention expensive, without adequate nutritional ingredients.

Red lentil wraps are so versatile and you can cook it as plain as you like, or flavor is up with seasonings of your choice. It's *zero fat with healthy carbs and protein. Below is my quick version.

Cooking Time: approx. 25 mins

Total Time: Soaking time + approx. 25 mins


Ingredients

1 cup red lentils

2 cups clean cold water

1/2-3/4 teaspoon salt

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon cumin powder

1-2 teaspoon fresh lemon juice

2 teaspoon neutral *oil (optional)



Instructions

  1. Wash the lentils multiple times in cold water, changing water until it runs clean. Transfer lentils to a bowl or a large measuring cup and add 2 cups of clean cold water for soaking 4-8 hours.

  2. After the lentils have soaked transfer both the lentils and the soaking water to the blender, and blend until a creamy batter, approx. 2 mins. Transfer this mixture back into the same bowl or measuring cup and add all the seasonings and mix well with a spatula or spoon.

  3. Heat a non-stick 12 inch pan on medium heat. With a small ladle or serving spoon pour some batter into the center of the pan and swirl the batter to spread into a thin wrap. Cook untouched for approx. 2 minutes until bubbles start to appear and batter starts to look dry around the edges.

  4. Gently glide a slotted or solid turner under the wrap to lift it up and flip it to cook the other side for another 1-2 minutes. Transfer the cooked wrap and place it between a clean dish cloth, covering all sides. This will help ensure the wrap stays soft and supple without steaming and breaking apart. Place the wraps in the dish cloth onto a large plate or a tortilla holder and place in the refrigerator.

  5. These wraps can be easily reheated in the microwave for 15-30 seconds and ready to be loaded with your favorites, or to eat as is.
