Gluten-free Blueberry Banana Walnut Cake

If you have ripe bananas then put them to good use! In-fact, the riper the bananas the better because they are the perfect source to add sweetness to the cake. Here is my quick and easy gluten-free banana blueberry and walnut cake. It comes together with a few simple ingredients and is so moist and delicious. It has just the right amount of sweetness and it's healthy too!

Yield: Approx. 8-12 slices based on thickness of slice

Difficulty Level: Easy

Prep Time: 10 minutes

Cooking Time: 30-35 minutes


Ingredients:

1 cup almond flour (sifted)

1 egg

2 very ripe bananas

¼ cup blueberries

2 tablespoons maple syrup

1 teaspoon vanilla extract

¼ cup almond milk

1 teaspoon baking powder

Pinch of salt

¼ cup walnuts


Instructions:

Heat oven at 375F.

Line a small loaf pan with parchment paper.


In a large bowl add bananas and break them down completely with a fork. Then add the egg and beat together. Add blueberries, maple syrup, vanilla extract, almond milk. Combine well.


Place a strainer over the bowl and add the almond flour, baking powder and salt and sift. Remove the strainer. Add the walnuts and gently stir all ingredients together.


Transfer the mixture to the loaf pan and bake for about 30-35 minutes, or until the center comes out clean when you insert a toothpick.



Allow it to cool completely before slicing.
