Ingredients
For Cake:
□ ½ cup gluten-free oats
□ 1 scoop vanilla protein powder
□ ½ cup shredded carrot (1 medium)
□ ¼ cup raw pecans (+ 2 tablespoons for garnish)
□ 2 tablespoons raisins
□ ½ baking powder
□ ½ teaspoon cinnamon
□ 1/8 teaspoon nutmeg
□ 2 tablespoons raisins
□ Pinch of salt
□ 2 extra ripe bananas
□ 1 egg
□ ½ cup almond milk
□ 1 tablespoon maple syrup
□ 1 teaspoon vanilla extract
For Yogurt ‘Icing’
□ ¼ cup of dairy-free Greek yogurt (regular Greek yogurt if you prefer dairy)
□ 1 ½ - 2 tablespoons maple syrup
□ 2 tablespoons roughly chopped pecans
Instructions
Pre-heat oven to 375 F
Prepare small loaf pan with parchment paper
In a large bowl, mash bananas till no more lumps
Add the egg and beat together with banana
Add milk, maple syrup, and vanilla extract and whisk together
Add all remaining ingredients and combine well
Transfer to the loaf pan and bake for 45 minutes, or until the toothpick comes out clean when checking for doneness in the center

Remove from oven and allow to cool completely
In a small bowl, combine yogurt and maple syrup and stir well
Spread evenly over cooled cake
Sprinkle with chopped pecans
