Easy Potatoes


A super quick weeknight dish that pairs well with Dal, roti, and rice for a complete meal.


Yield: Serves 4

Difficulty Level: Low

Prep Time: approx. 25 minutes

Cooking Time: 5 minutes

Total Time: under 30 minutes


Serve with roti and white steamed rice


Ingredients

1 pound yellow skin boiled potatoes, cut into bite size pieces

3 tablespoons oil

6-7 fresh curry leaves

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1 teaspoon salt

1 teaspoon coriander powder

1 teaspoon turmeric


Instructions

1. Heat oil on medium high, add the cumin seeds, mustard seeds and curry leaves and sauté 30-60 seconds. Add salt, coriander powder and turmeric, stirring quickly to cook and mix the spices, approx. 30 seconds.

2. Add the boiled potatoes and gently mix well until coated in the spices.
