BLACK BEAN SOUP

We all have our favorite versions of Black Bean Soup, which can be very satisfying. I personally love a thick, hearty, satisfying black bean soup, but there are times you want something that feels a little less 'heavy'. This version of the soup is on the lighter side, in both the creaminess and the seasonings, ending with a refreshing burst of lemon that brightens the overall flavors. It's just as popular in my home as the traditional black bean soup and makes a perfect weeknight go-to, whether as a main or a side.
